Much  = mucho, mucha.
  a) Usamos much cuando hablamos de cantidades con sustantivas y es utilizado sobretodo en frases negativas e interrogativas.
Ejemplos:
There isn’t much sugar left. - No queda mucha azúcar.    (to be left = quedar)
I haven't eaten much today. - No he comido mucho hoy.
How much is it? - ¿Cuánto cuesta esto?
How much money have we got left?. - ¿Cuánto dinero nos queda?

  b) En frases afirmativas normalmente se utliliza a lot of en vez de much.
Ejemplos:
She’s got much money.  (esta frase no suena bien, será mejor decir)
She's got a lot of money - Ella tiene mucho dinero.

Many  = muchos, muchas.
  c) Se utiliza sobretodo en frases negativas e interrogativas con un sustantivo contable en plural.
We have many friends.- Tenemos muchos amigos.

  d) Se puede usar many en frases afirmativas, aunque no es muy común. Normalmente, usamos otro cuantificador como a lot o a lot of.
Ejemplo:
There are many / a lot of different religions in Asia. - Hay muchos diferentes religiones en Asia.

  e)  Podemos sustituir mucho, mucha, muchos y muchas por a lot o a lot of en frases afirmativos y negativas pero no en frases interrogativas. Se puede usar con sustantivos contables e incontables. La diferencia entre a lot y a lot of es el siguiente:
usamos a lot of - cuando va seguido de un sustantivo, por ejemplo a lot of fruit o a lot of cars..
y usamos a lot - cuando no va seguido de un sustantivo.
Por ejemplo;
The children have eaten a lot of sweets. - Los niños han comido muchos dulces.
The children have eaten a lot. - Los niños han comido mucho

  f) Si combinamos much y many con too o so podemos expresar la idea de una cantidad excesiva.
Ejemplos:
We have too much work. - Tenemos demasiado trabajo.
We have so much work. - Tenemos tanto trabajo.
John has so many books there is no room for anymore. - John tiene tantos libros que no hay sitio para ni uno más.
There are too many cars in the city. - Hay demasiados coches en la ciudad.

  g) Hay frases en español que usan mucha pero en la traducción al inglés no utilizamos ni much ni a lot of.
Hace mucho calor. - It’s very hot.
Hace mucho frío. - It’s very cold.
Hace mucho viento. - It’s very windy.
Tengo mucha hambre. - I’m very hungry.
